CELERY
ROOT Large, white, round root with crisp celery flavored flesh.
Stores well and its culinary uses abound: roasted with meat or in
a vegetable dish, added fresh to juice or salad, shredded or chopped
in salad, included in soups or stews, in casseroles.

Celeriac - Produces large
solid roots weighing 4-5 pounds. Good storage and bolt resistance.
CHINESE
CELERY
Celtuce/Stem
Lettuce - Much like a lettuce-celery cross. Young leaves are
great for salad and center stem may be used like celery.
Kin
Tsai Chinese Celery (OP?) - Yellow green stems and leaves are
tender and crispy. They are excellent in stir-fry and soup.
Mitsuba - Japanese fresh or cooking green, much like parsley,
but with a unique flavor and 3 ft tall. Can be blanched to grow
tender white celery-like stems.
