Quinoa - Rare seed is a short season crop - yellow-brown seeds
on heavy gold-orange seed heads, 3-5 ft tall. Quinoa looks like
Lamb's Quarters and has tasty young greens. Seed can be substituted
for couscous, barley or bulgar.
Edible Flax - A golden brown flax with a mild nutty
flavor. High in omega-3 amino acid. Recommended for cancer prevention
and other health concerns. Use whole, roasted or ground, sprinkle
on vegetables for a seasoning. Delicate plant is 8-22 inches tall
with blue petal flowers.
Amaranth
"Love Lies Bleeding" - With beautiful trailing red
seed head this plant grows to about 3 ft tall. Mild flavored leaves
are rich in protein, vitamins, minerals and amino acids. The grain
has a very high protein content. Seed can be cooked for cereal or
ground into flour.

Personality Amaranth - Same plant as above, but a taller plant
with longer, flowing seed heads of red, green and gold.
