SALAD GREENS Gourmet fresh greens add exciting new textures and flavors to your garden salad. (growing tips)

Arugula Coltivata organic seed - This Italian green has a spicy, nutty flavor, adding a picante and unusual taste to salads and tomato dishes. Great for salad, alone or as part of a greens mix. Hardy annual plant that is easy to grow.
Arugula Rustica organic seed - Perennial arugula is a great salad addition. Leaves have the distinctive nutty flavor but are smaller and stronger than the annual counterpart.
Celtuce/Stem Lettuce - Asian green. Much like a lettuce-celery cross. Young leaves are great for salad and center stem may be used like celery.
Corn Salad 'Vert de Cambrai' - Corn Salad (or Mache) is an heirloom American salad green that is easy to grow and has a delicate nutty flavor. The plant is compact rosette with small oval dark green leaves.
Cress, Garden - Also known as Peppergrass, this salad green adds a spicy flavor to salads and sandwiches. Begin picking when 2 inches tall.
Dandelion Greens 'Catalogna Frastagliata' open pollinated seed - Big tall bunches of frilly salad greens with diminishing stalk. Erect bunches stand 12 inches tall and add another unique flavor to your garden salad.
Radicchio 'Verona' - Dark-red round head traditional Italian variety. Also known as Red Chicory. A beautiful red accent and a crispy, mild cabbage flavor for salads or hors d'oeurves trays.
Strawberry Spinach/Beetberry - Young leaves are good in salads, spinach-like potherb when older. Fruit are bland but nutritious, raw or cooked. Immature seed heads are good in stir-fry. Wild Mexican native.

ESCAROLE/ENDIVE Depending on the variety, these quintessential European greens may be found in a variety of fresh and cooked dishes. (growing tips)

Chicory 'Crystal Hat' - This Belgian-style chicory makes a torpedo shaped endive head without forcing. Great for salads or garnishes. Rinse in warm water to remove bitterness.
Endive 'Green Curled' - Flavorful and frilly green leaves are a delicious addition to salads and also an excellent garnish for hors d'oeurves.
Endive 'Mariachere' - Also known as "Frisée," this super frilly green is an essential ingredient in French salad.
Escarole Endive 'White Naples' - Large, thick-leaved Italian escarole is a nutritious and delicious green. Excellent for soups, casseroles and even in pasta sauce!

MUSTARD GREENS A standard Southern green, mustard greens have long been touted as a health remedy and tonic. Steam or saute them with your favorite seasonings or add them fresh to salads for a satisfying zing. (growing tips)

Florida Broadleaf Mustard - Rounded leaves with serrated margins. Vigorous growth habit.
Horned Mustard organic seed - Fast growing mustard green with thick midribs and little "horns" where the leaf begins.
Southern Giant Curled Mustard - Known for it's traditional flavor, Southern Giant is delicious stewed or stir-fried. Or use the fresh young leaves in salads. Very nutritious leafy green.

OTHER GREENS A selection of greens that are less common in the PNW, but popular in cooking in other regions. (growing tips)

Collards 'Champion' - Fast growing southern style green. Tender and succulent stewing green.
Collards 'Georgia' -
Upright uniform plants produce tender delicious greens. Succulent with mild cabbage flavor. Nutrient-rich collard greens are great for steaming or stewing. Light frost improves the flavor.
Epazote
- Easy to grow member of the goosefoot family. Fast-growing to 4 ft tall. Use in authentic Mexican recipes, especially bean dishes where Epazote helps reduce gas.
Melokhiya/Mazzocchi - Popular Mediterranean vegetable. Mild tender leaves thicken soups, stews and vegetable sautes. Contains an abundance of calcium, potassium and vitamins A, B1 and B2. Begin harvesting shoots and leaves when plants are young. Can also be dried for winter use by hanging in dry location.
Orach 'Double Purple'
organic seed - Also known as Mountain Spinach, this tender green spring green grows to 5 ft tall with large, savoyed, deep purple leaves. Three times the vitamin C of spinach! Ornamental and edible. Good fresh or cooked.
Orach 'Golden Mountain' - This pot herb is a fine spinach substitute. This tender green spring green grows to 6 ft tall with large, savoyed, golden leaves. Three times the vitamin C of spinach! Ornamental and edible. Good fresh or cooked.
Turnip 'Seven Top'
- A lovely braising green with a turnipy flavor. These greens are packed with calcium and are tasty steamed, stir-fried or fresh in salads.
